Dessert wines are mainly white in colour. To produce a dessert wine the grape must be picked at point when it is over ripe and suffering from the fungus infection called “Botrytis cinerea” a.k.a. noble rot, or as in Eiswein, over ripe and frozen. Due to the high degree of skill required to produce dessert wine they tend to be expensive and therefore sold in smaller bottle sizes
