Sherry

Sherry or more correctly 'Jerez' after the region in Spain but pronounced 'hereth' has gone through major changes in the last 20 years and now the descriptions used to describe the style may not mean the same they did years ago. Spain has taken the region, shaken it and now produced a sherry with remarkable flavours.

To-day 'Fino' is pale coloured, dry and drunk chilled as an aperitif. 'Manzanilla', fino wines matured in the costa region of Sanlucar and is the lightest and driest of Sherries. 'Amontillado', today means older Finos with a slightly richer nuttier character but dry or using the commercial style of 20 years ago, richer by the addition of Oloroso to Fino Sherry. 'Pale Cream', Fino Sherries with a light-coloured sweetening added.
